I thought visualisation was for textures, billboards and that. I don't believe I have the visualisation function but I can still see both sides of the tin in openGL, and pipes too. I don't have visualization either although can see both sides of the TIN in Open GL view; should I not be able to? As ...

I don't think so; this would be handy though if it could be a view setting similar to tin flow arrows.

I normally use a slope analysis file to sort of represent this when working in 12d.

Are you talking about the batter? If so then find that under Design => Templates => Templates edit => Select template => Select Final cut/fill values and put them on 0 and a slope width of 0 to remove.
